Best coffee yet
I've enjoyed their Signature Blend for a long time, but just recently saw the limited edition. This stuff is next-level! Rich flavor, low acidity and extremely smooth, made in an Aeropress. I split the two pounds into three portions, vacuum sealing and freezing two of them. They stay really fresh that way. I store the balance in a canister with argon gas, also great for freshness. The beans are very dark colored with an oily sheen and a lovely aroma. Really enjoying this coffee!

I love these beans
Admittedly, I have only ever used these coffee beans to make my cold brewed iced coffee, so I can't attest to the experience when prepared hot. That being said, I originally tried this product because I was looking for decent priced coffee beans in bulk, and absolutely fell in love with the flavor.I'm in law enforcement, so I drink coffee like it's going out of style. I'm fickle about my coffee. I work 90+ hours a week, so coffee is basically breath to me. After partaking of the swill that ends up in the breakroom coffee pot, I reverted back to brewing my own at home, and with my multiple 16 hour shifts, cold brewing became my choice of brewing to have enough coffee to last me through my shifts.But... cold brewing gets expensive. It takes more grounds to seep and cold brew coffee than it does to make a simple pot of coffee. I discovered Don Pablo when I was searching for bulk beans. I fell in love after the first shipment.I've experienced a wide range of coffee styles. My Dad was a truck driver, I owned a restaurant, and I've worked for millionaire construction contractors. Three industries of "how's the coffee?". Don Pablo has been my go-to since I discovered it.The packaging is superb. I typically order a 5-pound bag of roasted whole beans that typically lasts me almost 2 months. The resealable bag keeps the beans as oily and glossy from the first day I open it to the last. It's all about the oils. If your beans are dry, you lost the game.The flavor is robust, yet very smooth, not overpowering or bitter. I grind the medium roast. I prefer medium roast when I brew hot, but the Don Pablo medium-dark is perfect for my cold brew. It's smooth, not brackish. I ran out of Don Pablo a while back. I bought a few bags of different roasts of beans from different stores, just to get by until my shipment arrived. The roasts I bought at the Box Stores were bland, dry, and had off-flavors. Now they're just sitting in my coffee cabinet, waiting for me to unload them when a fair-weather friend comes to visit and I can get rid of those subpar beans.I probably wouldn't write such an intricate review if it weren't for that fact that I drink Don Pablo every day and it's become a part of my day. Seven days a week. I cold-brew Don Pablo twice a week, to get me through a work week, that I drink over a 12-cup pot of it every day. I cold brew it, throw it over ice, and it's robust enough to last through a 16-hour shift in my thermos and be as good to the last drop as it was from the first.

It is always cool to arrive home and see the familiar "Smiling Package" in my parcel box. Today was no exception.Upon opening my treasure I was very pleased to see a bag of the Coffee Beans I had ordered just a few days ago, and see a happy Don Pablo, beckoning me to open the bag, see and smell the goodness that lay within, and set into action the events that would add a smidgeon of sunshine to an otherwise bleak day setting the capstone on the Pyramid of Giza.I carefully opened the zipper bag that firmly held my beans. I didn't want to spill any of this goodness on my kitchen floor and let even a hint of Saltillo and pet dander spoil my surprise. The smell of rich coffee beans hit me squarely in the nose, like a prizefighter landing a dizzying jab to his opponent. It smelled like a combination of heaven and a Mothers Love. In a word- delicious.I have a fancy-schmancy beverage machine that grinds the beans immediately before brewing them. The smell as the beans were being ground was heavenly. When the coffee began to brew, my mouth began to water. This was going to be so good! For the tekkies who want to know how many beans, how much water, all the things snooty people just have to know. I eyeballed the grinder full, added a full carafe of water and let it go. I'm not one of those "137 beans and exactly 544.08275 ml of only spring water from the base of Kilimanjaro" kind of guys. I just want a good tasting cup o' Joe. I'm a simple man in that respect.I was not disappointed. These beans make a fantastic cup of coffee. Although everyones tastes differ, I honestly can not think of many people who would dislike this coffee. Rich, smooth, very flavorful. This is good coffee!

Really great coffee.
My wife and I will go through 12 ounces of coffee a day. It is our wake up drink in the morning. I drink it black and my wife uses creamer. So, cheap coffee I s not going to work.We grind and drip it early and it lasts to noon. The prices have gone up but this not as bad as others. It is the market and we live with it?I'm not exactly sure why, but I find this coffee is far better than the market coffee you can buy in stores. We get a 10 pound bag or two a month, using subscribe and save. A great way to save a few bucks.
