The cutter assembly feels more solid than I would expect, considering the scissors-like expansion. It’s well made of stainless steel with 4 wingnut tightening adjustments to hold the distance stable between the cutting wheels once your desired strip width of dough is reached. Just loosen the wingnuts to allow for easy expansion or contraction of the scissors frame. Adjusts from the smallest strip width of 1/2” each to the widest strip of a little over 2” each.
