The one you purchased is specifically for sweet baked goods like sweet rolls and sweet breads. The red, which I have, is for breads/rolls that don't have as much sugar or other sweetener. (I use it specifically for egg challah, my recipe for which has 3 Tbsp. of sugar, so it does have some sweetening.) I think you can probably use the blue label Gold for less sweet goods without a problem.You might want to check with SAF there's an 800m number. SAF is the best yeast I've ever used.

Q: What is the difference between saf-instant and saf-instant premium?

Faster proofing with premium is the major difference.(15% to 30% faster) Proofs larger and allows for less yeast usage.

Q: What is the expiration date?

It depends on how it’s stored. I store in the freezer so it lasts indefinitely. Moisture is the main reason for a short shelf life.
